Baby Bok Choy with Baby Bellas

Such an easy, quick dinner.
It takes more time to chop your veggies than it does to cook them.
You could also make this as a side dish.

Ingredients:
Baby Bok Choy
Baby Bellas
Onion
Garlic
Green Beans
Red Bell Pepper
lil' bit of Sesame Oil
Sesame Seeds
salt and pepper

Wash and chop your veggies.
Mince the garlic.
Adjust your ingredients based on what you like.
My family really loves onions so I used an entire onion in this recipe.

Dear Reader, please meet ET Coffee Mug.
I'm pretty sure he's handmade.
My Honey found him at a thrift store before we met...he's been around awhile.
And yes, I have had bicycle flying daydreams while enjoying my caffeine in a cup.

A wok would probably be perfect for this but I have a huge frying pan instead.
Heat your oil over medium-high to high heat.
Add garlic and onions, stir fry for a few minutes.
Add green beans, red pepper and sesame seeds.
I like to add the seeds now so they get toasty (or you can toast them first).
Stir fry for a few more minutes, probably 4-5.

Finally, add mushrooms and bok choy.
Stir fry for 5-8 more minutes until everything is done.
It may take less time in a wok.

Salt and pepper to your liking and enjoy.

It's really yummy just like this but if you'd like to add something to the top,
here are a few suggestions:

Tamari,
More sesame oil,
A light teryaki sauce,
Something sweet, like a maple glaze.

Be creative, have fun. It's just food.

My daughter & her hubby have been grilling 'bella burgers' recently, yum!
I have been cooking a small one in a touch of coconut oil in my cast iron frying pan w/some fresh asparagus, & pouring in a bit of the olive oil marinade some kalamata olives came in - such a nice touch!! & adding greens (kale & chard from my garden) the last few minutes.
