Apple butter.
I remember eating this as a kid every fall.
Cool air, red and gold leaves on the ground,
over-sized sweaters and apple butter.

The difference between my childhood apple butter and the stuff I make now?
No sugar!I use naturally sweet apples and 100% juice.
Ingredients:
3 lbs apples.
(Choose sweet apples, the kind that taste like sunshine. I used organic Fujis.)
2 cups 100%, no sugar added apple juice.
2 tsp cinnamon
1/2 tsp ground ginger
Chop and core apples. I leave the peel on.
When all is done, you'll never notice they're there.

Add juice, cinnamon and ginger.

Set crock pot to high for 4 hours.
After 4 hours (when your house smells like the holidays)
use an immersion blender (or transfer to blender/food processor in small amounts)
and blend until smooth.
Set the crock pot to medium or low for 8-12 hours,
leave the lid vented to allow the apple butter to reduce.
If it's not thick enough for you, cook longer.

That's it!
Spread on toast, eat with peanut butter and bananas, or just use a spoon and enjoy.
This recipe made 1 medium jar of apple butter.
